The Park Grill operates from a simple position: that the great American grill room is one of the world's genuinely original dining formats, and that it deserves to be treated with the same precision that any serious culinary tradition demands. Chef Webb's programme is built around provenance — he sources from named farms and specific waterways, dry-ages his own beef in a glass-fronted room visible from the dining floor, and maintains a raw bar whose bivalve selection changes twice daily. The room faces Central Park. The food faces the question of what American cooking can be.
