Royal Thai cuisine is among the most technically demanding culinary traditions in the world. The balance of sweet, sour, salty, bitter, and spicy is not achieved through measurement alone — it requires a palate trained over years and a sensitivity to the seasonal variance of each ingredient. Chef Araya Sawang studied in the kitchens of Chiang Mai and the royal palace culinary archive before bringing her understanding of this tradition to Sala Rim Nam.
